1st ANNUAL DOWNTOWN PROUD CAJUN FESTIVAL
GUMBO COOK-OFF FRIDAY MAY 9TH
AT THE DEPOT SQUARE (8TH & OHIO)
BOOTHS: Booth location is on a first come, first served basis. The Gumbo Cook-off Chairperson will be on the
festival grounds beginning on Friday between 3 p.m. until approximately 6:30 p.m. The area size will be 10’ x 10’.
Teams are encouraged to decorate their area with a Mardi Gras or Cajun theme. Teams must furnish ALL their
cooking equipment including tables, chairs, butane cookers, etc. Electricity is available. There is a water source
nearby.
GUMBO: The main ingredients of the gumbo may contain chicken, sausage, and/or seafood. Gumbo and roux
MUST be prepared on the festival grounds and not prepared in advance. Competition Entries must be at least 12
oz. Of Gumbo. Rice will be provided by Festival. Meat may be cut up before competition, but all other ingredients
MUST be prepared on site. SALE: Gumbo may be sold to patrons on Friday Night ONLY. You must sell gumbo for
(3) tickets ($3.00), with (1) ticket ($1.00) going back to festival. You may give small samples away at your
discretion. Rice will be provided to Teams that sell gumbo at no cost.
CHECK-IN: Check-in begins at 3 p.m. Friday afternoon. Since the Festival begins on Friday evening at 6:00, all
vehicles will be moved by 5:00 p.m. NO VEHICLES ALLOWED IN FESTIVAL GROUNDS.
JUDGES: Numbered containers, for judging your gumbo, will be provided by the Gumbo Chairperson between 4 p.
m. and 6:00 p.m. Explanation on judging will be given to you upon check in. All gumbo entries must be turned in
by 8:00 p.m. The winners will be announced at 9:30 p.m. on the Main Stage.
AWARDS: There will be four (4) trophies awarded: 1st, 2nd and 3rd place, and Showmanship award. The
Showmanship trophy will be awarded to the booth that shows the most creativity, flair and fun in the design of their
booth.
ADMISSIONS: Each team will be allowed two (2) free admissions, any additional team members will be charged
$5.00.
SAFETY NOTE AND REQUIREMENTS: 1. For the safety of your team and of the general public, and because of
insurance and state regulations, bottles and/or glass containers will NOT be allowed on the Festival grounds. 2.
Please leave all food and drink at home; there will be ample food and drink available on the premises for all. 3.
Please clean your booth before your team leaves the area. All garbage bags must be dumped in the large
dumpster located on the festival grounds. 4. The Downtown Wichita Falls Development Inc. has the right to accept
or refuse any application. 5. The DWFD, Inc. and the Wichita Falls Professional Firefighters Association, its
officers and agents, employees, and other representatives shall not be held liable for, and they are hereby
released from liability for any damages, loss, harm or injury to the person or property of the vendor or any of its
officers, agents, employees or other representatives, resulting from theft, fire, water, weather, accident or other
cause. The vendor shall indemnify, defend or protect the DWFD and WFPFFA against and hold and save the
same harmless from any and all claims, demands, suits, liability, damages, loss costs, attorney fees and expenses
of whatever kind or nature, which might result from or arise out of any action or failure to act on the part of the
vendor or any of its officers, agents, employees or other representatives. Please call us at the Downtown Wichita
